When we go camping we do like to cook meals at the campsite on our little gas burner. It is all part of the experience isn’t it! There are lots of simple meals you can cook quickly and easily that the whole family can enjoy. We usually end up with something easy like hotdogs or pasta with a sauce. But what if you want to be a bit more adventurous?
Simply Hike have challenged bloggers to create a dish which could be cooked on a campfire or in an alfresco setting.
I got my thinking cap on and decided to use a few favourite ingredients together with some campfire staples to create a dish which can be cooked in one pot over the campfire.
Chorizo and Baked Bean Campfire Stew
4 Spring Onions
4 Celery Sticks
1 Tablespoon Tomato Puree
2 Tins Baked Beans
1 Tin Potatoes
1. Peel and slice the chorizo.
2. Cut bacon into small pieces, removing fat.
3. Finely slice the onion, celery, spring onions and carrots.
4. Fry the chorizo and bacon in 1 tablespoon of oil for 3 minutes.
5. Add the vegetables and cook for a further 10 minutes.
6. Add the puree, potatoes and beans, cover and simmer for 10 minutes.
7. Serve with some crusty bread and/or salad.
This dish comfortably served the 5 of us and all of the Little A’s really enjoyed it. What I love about this recipe is that you can change it to suit your family’s personal tastes. The vegetables can be changed and you could take out the meat to make it vegetarian.
